distilled vs. purified vs. spring water for soaking..which is better

I have oat groats, black turtle beans, green lentils, and brown rice soaking in 4 different plastic containers. I’m also using spring water and will sometimes (in the future) use distilled or purified water to soak themm…does it matter what kind of water I use?

    I soak my food in glass containers. Usually canning jars. I use to use spring water but now use distilled water as I have the machine. The main thing. Is the spring water pure. Chemicals added? Does it have filters? What about the pipes it goes through? Then the faucets. I have mentioned several times. That we just put in new faucets and the warning was that there was led in the joints. We should let the water run a couple minutes if cold water for drinking, and don’t drink the hot water. Hum

    The water does soak into your food so these are a few things to think about.
