Stuff ‘em! Make up some nut or seed pate or cheese or a mix of finely chopped veggies and either eat them straight away or dehydrate for 4 hours or so to soften the peppers up a little. Or use them to make pepper soup or sauce. Enjoy them.
Thinly slice them and put em in a romaine wrap with pate.
I love them with hummous!!
Love the stuffing ideas. You could try blending them into a soup with some cashews, garlic, tahini and lemon juice and top with cilantro.
Or serve the soup in a hollowed-out pepper.
