tiger nuts

Hi everyone!

Ever heard of tiger nuts, or “chufas” in Spanish? I just love them, but I don’t know if they are actually raw! As they don’t have the fat consistency of other nuts, I doubt they are part of this family. I think they are more probably a kind of pod or bulb, and they have a kind of “earthy” flavour which makes me hope they haven’t been pasteurised and are just coming straight from under the ground without being washed or anything. They serve as the basis in the famous refreshing “horchata” drink from Valencia (I wouldn’t recommend that one though, obviously contains loads of cooked ingredients, including sugar, unless you prepare it yourself). If anybody knows more on the subject, I would be happy to hear from you !
