You could try to ferment it, like Kim Chee.
hey spanky! i had a hankering too. I took raw okra and soaked in apple cider vinegar with some sweetner(dates or agave) and some dried red pepper, a dash of salt let it sit all day and had it as a snack that evening, not quite grannys recipe but ill play with it and see what i can come up with this was sweet, spicey and crunchy!!!
