peeling pumpkins HELP

Ok it’s Pumpkin seasons and being one of my FAVORITE foods I am making lots of pumpkin stuff. Especially when it’s a food that’s soooooo cheep!

Problem is that it’s such a huge pain to peel. When I was SAD I used to boil them and then just scoop out the pulp, now it’s cutting them up, peeling that hard as nails rind and what a mess and hassle.

Anyone got any ideas???? I’m ready to try anything.

BTW Yams/Sweet Potatoes sub really nicely for pumpkin.

    I peeled mine with a regular vegetable peeler without much problem.

    Someone in my what to do with pumpkin seeds thread said she blends everything up, skin, pulp, seeds and all. I don’t see why not.

    I cut the top center out with a sharp knife. Then putting my four fingers on the inside and thumb out side then cut down the outside skin with the knife. Peeling (cutting) the skin off, when done you can trim the top and bottom. I just cut the bottom out like I did the top. Nice for compost.
