Broccoli Madness - Raw version?

I LOOOOOVE this salad but the original recipe calls for bacon & mayo(shown below).

I managed to make it vegan using vegan-bacon bits & tofu-mayo.

Now I'm trying to convert this into "raw version" but don't know what I should use to substitute these 2 ingredients. Any ideas?

1 bunch uncooked broccoli, cut into florets

1/2 cup crumbled cooked bacon

1/2 cup cashews

1/3 cup raisins

1/4 cup chopped red onion

1 cup mayonnaise

1/3 cup sugar

2 tablespoons apple cider vinegar

Mix the broccoli, bacon, cashews, raisins and onions in a large bowl. In a second bowl, beat dressing ingredients together gently until smooth.

About 10 minutes before serving, toss the salad with the dressing to allow flavors to meld. Serve on chilled salad dishes.

  • Here's the one I make - the orange in the dressing is fantastic!! We just can't get ENOUGH of this darned salad, absolutely love it:

    Chop broccoli (small, medium, your choice) 400g

    Chop or grate carrots (or use chopped apples instead) ~ 200g

    Chop little onion (your choice of color) ~75g

    Add equal amounts of raisins and sunflower seed (or preferred nut)

    1 cup each

    Mix well, using roughly twice the amount of broccoli as carrot or apple.

    For dressing I blend (in blender) one peeled orange, about 2 Tablespoons of olive oil and about 2 tablespoons of honey. Pour over, let sit for a bit, overnight is fine, but then, so is 15 minutes.

    * 2T agave & 1T honey

    We love this and if I use enough seeds or nuts, I call it dinner at least one night a week.

    You could also add celery, cauliflower, etc. Hope you like
