I usually just let the seeds or nuts ferment... First soak over night and rinse for two nights then allow to ferment in fresh soak water for about 3 or 4 days, depending on the room temperature... Then process in blender or food processor with other ingredients...
If I want the result to be faster then I add 3 or 4 capsules of Kyo-Dophilus which has 1.5 Billion live cells per capsule of L.acidophilus, B.bifidum, B.longum.... But I'm sure any brand of live probiotic would do fine... You will find it under refrigeration in the Whole foods or Health store... i usually ferment cheese after grind up seeds/nuts, i don't know why i didn't think about to ferment them first....!

when i looked online, there's tons of probiotics so i wasn't sure what to do....
next time i go to my health food store, i go look at refrigeration one.
