I got a coconut, now what?!

Hi,

I understand that young Thai coconuts are a big part of this diet. I have been transitioning for about six months now, currently eating raw until dinner (about 80% raw I guess.) Yesterday I took the plunge and bought one of those white coconuts. Now what?

Does anyone have a good introductory recipe for this thing? Or should I just crack it open and dive in? Make a smoothie? Any help would be appreciated.

    how can you tell the difference between a young coconut and an old one.

    Now my absolute favorite is 1 young coconut, 1 frozen banana, a big wedge of fresh pineapple and half (about 4 in.) of a sun dried vanilla bean. Shoot me to the moon, I'm in heaven! =)
