Portobella mushroom prep?

I LOVE portobella mushrooms...they're fine to eat raw right? I always loved marinating them in balsamic vinegar, olive oil, garlic, salt and pepper and then grilling/broiling or sauteing them. I'm keeping balsamic in my diet even though it's not raw...do you think just letting them marinate longer (like overnight) and popping them in the dehydrator for an hour would give a pretty similiar effect to the cooking method I used before?

    don't even worry about the dehydrating part, they soak up so much flavor on their own!

    They are wonderful marinated and raw. If you want the chewier texture it would be fun to dehydrate a bit. Let me know how it goes.
