RAW salads with a long self life and RAW nori rolls?!

Hi guys.
We are opening a small cafe focused primarily on very good quality cold pressed juices and I was hoping to feature a salad in the fridge that people can have with their juices.
I also had the idea of doing some Nori style rolls primarily with Jicama as they look nice.  
Just something nice and raw to go with the juices so that people can have some substance :) 
Any help would be much appreciated!
