I am assuming these are sprouted seeds (not dormant). Also, nutrient density depends on the amount of time sprouted (length of tail).
And, something more to think about. “A roasted nut is 75% fat and 25% protein…” When sprouted it becomes “25% fat and 75% protein”. [Experience Life July/Aug 2007 edition]

Germin8, thank you. I haven’t eaten any sprouts recently. I’m just starting to try sprouting, but it’s definitely interesting. I’m trying to find a way to bump up my protein intake (just a smidgen) without adding excessive amounts of fat.
As for the 25% fat and 75% protein… the article was written by Dara Moskowitz Grumdahl title “Eat It Raw!” It was about Klein & Trotters Raw un-cookbook… and Klein made that comment.
Make sure you put “sprout” because that should bring up anything with “sprouts” or “sprouted” in the name. At least that’s how it is on Fitday. http://fitday.com/fitness/FoodSearch.html?_a_Da…
You can look at the nutritional value of the seed or whatever else you’re using and try multiplying it by some percentage, but otherwise, if the info is unavailable, use a legume’s sprouted info or just do a guess. :/
