I really love artichoke hearts but I hate wasting the rest of the artichoke - I've tried various ways of cooking it and haven't found anything that works yet.

I'd so much rather be able to eat them raw - does anyone have any suggestions?

raw recipes for the heart? and any way to eat the rest?


  • You can slice the heart into thin slices/shaves and eat them in salads, slaws, etc. The leaves, I'm not sure about.
