Cooking does make some veggies more easy to digest, I don't believe it has to do with just chopping it up, but an actual chemical change. Of course, some vitamins can be lost (why you don't want to overcook). I'm going on memory, and will try to find some links about that for more factual info. I believe that covers veggies like brocolli, carrots and such, maybe some greens like collards. The tender greens- no. I could be mistaken, but I believe that's why Dr. Graham of the 80/10/10 diet just recommends tender greens and fruit (and not all the rougher veggies).
i disagree with sisterbecky, respectfully. i can't digest kale as well unless i marinate it or blend it. i prefer to marinate or juice broccoli, but whole it is a little rough. i think blending helps with digestion a lot.
this is part of the reason that i am ( FOR NOW) trying for 80-85% raw... i just can't stand things like potatos, turnips or broccolli raw yet. i can steam it, even to crisp tender and feel much better about the taste. although i'm trying to stir no fry recipe on her... it looks yummy
