Thanksgiving / Holiday 2010

I'm pretty excited - this is my first raw (ish) holiday. I've made or am in the process of making...

raw:

walnut sage dressing stuffed portobellos

parsnip shallot whip

avo creamed spinach

carrot apple soup

cashew cheezecake with date almond crust and persimmon coulis

and for breakfast: eggless nog shake

cooked:

kabocha squash (roasted)

    We dont celebrate it in the UK, but that sounds delicious saram. Might have to try a stuffed portbello myself.

  • it was pretty awesome. i would change a few things, but this was a first for me so i'm happy. i took pics b/c i forget what i make and then want to make it again and forget-

    the parsnip shallot whip looks so good. amazing food pics! :)

  • the portobellos was an adaptation from choosing raw. i used the following, though if I was doing it again I wouldn't use carrot pulp b/c it made it a weird texture & instead might use ground flax or something else as a binder :

    2 cups walnuts, some turned into powder, some left small chunks

    salt and pepper to taste

    fresh thyme

    fresh sage

    dried rosemary and poultry seaasoning

    garlic clove

    2 small celery stalks, diced small

    1-2 T walnut oil

    carrot pulp until right texture

    onion, diced small

    yellow bell pepper, diced small?
