When a nut is blanched it is parboiled to remove the skin.
When a drink is unpasteurized, the liquid itself has not been boiled. I assume it would be the same for a non-drink (i.e. almonds).
So, in a nutshell (pun intended), both words mean pretty much the same thing....unless you're buying almond milk, in which case you could possibly end up with unblanched nuts in a pasteurized drink, or blanched nuts in an unpasteurized drink.
