I love kale. I eat a little every day in my green smoothie. I know I should vary my greens and I do…but kale is my favorite.

I highly recommend V. Boutenko’s book “Green for life”.... there she mentions that we should vary the greens we eat. However, Kale is one of the best ones out there. It is probably the food that is most nutritionally perfect for humans to eat… so I don’t think you can get too much of it. What are kale chips? Can you post your recipe? I can’t get kale here in Norway… it is quite depressing… but I am going to try to grow it in the summer. Does anyone have experience with growing it? I love kale, too! yum yum!

A few summers ago I grew lacinto kale in central PA. It is really hardy and survives in hot humid weather and into the fall frosts. It is really good if you pick it in the morning.

Too much is only if you’re eating/drinking a head of kale daily for 3 months… according to Boutenko, any one green for this amount of time is not good due to the specific toxin found in that green. So vary! My favorites are spinach and chard!
