Preserving vegetables

I was wondering if anybody knew of any good books/resources on finding information on preserving vegetables. When I get a house I plan on growing lot of vegetables and I was hoping there were other ways of preserving besides freezing, or if perhaps I should grow based on what preserves well. Thoughts?

I just finished reading The Body Ecology Diet and I learnt that cultured (fermented) veggies will last quite a long time. They’re fairly simple to make, but I haven’t tried them yet. If you try it and like it you could always use that as a method to preserve some of the veggies. Plus, it’s a great way to help increase your absorption of nutrients.
