Check out the “Real Cream Cheese” recipe on this site. Raw sauerkraut (Rejuvenative Foods brand) is similar to rejuvelac in nutrition & has the friendly bacteria. For the cream cheese, I opened capsules of a probiotic supplement because I had them and didn’t know where to get the bulk powder. I used about 6 capsules.
Also, there are several mayo recipes on here – just search mayo or mayonaise.
sometimes people use miso, because it is fermented as well… it depends on the recipe, but yes, you can definitely just use probiotic.
you can also make rejuvelac with other grains, like buckwheat!
Like mandelicious said you can use other sprouted grain. The sproutpeople I think say rye lends a good flavor.
