Wow, this is weird, because I just juiced a beet today and I’m saving the stalks for a salad for lunch. YUM!
i'm a bit late (2 yrs!) joining in here but must add to the discussion that
i too was totally juiced to blend up my beet greens in a smoothie
it was far more delicious than i expected
and turned the smoothie a beautiful rich burgundy violet/red
