Potatoes

Anyone have suggestions on what makes a good potato or yam to eat raw? I was thinking of cutting one up and soaking/marinating it in an oil/spice solution to soften it up (I am trying to imitate a West African dish that traditionally uses (very cooked) “yams,” as they call them there). I don’t dehydrate.

Anyone have experience with potatoes and know which variety makes a good raw choice? Any feedback on how it tastes?

    Spiralize some raw potatoes, soak in vinegar (if you want salt and vinegar chips),drain, and toss in olive oil. Put the chips on a piece of parchment paper and put in on the dashboard of your car. Substitute for dehydrator. Salt. Yummy potato chips. I use either the Russets or the Yukon Gold potatoes.
