When to refrigerate

Hi! I was wondering if any of our raw food has to be refrigerated. I am kinda new to it and I love taking a homemade applesauce with banana mixed in to class as a snack (as to curb my craving for that stupid snack machine). Should it be okay if it is airtight? I made some this morning at around 0600 and ate it around 1030. Am I pushing it? I would love to take many other snacks I have made but I am not aware of if it needs refrigeration. I would love to take the zuchinni marinara (it is a 4 1/2 class) to have something filling. I just do not want to end up poisoned!
