Too high dehydrator temp causes food to taste rancid?

I have been using a food dryer to cook sprouted grain bread and veggie patties, noticed both have tasted too sour, now think the temp may be to blame as it is over 120 degrees f. Doesn’t have a temp control but I think I may put clothespins between the plastic trays to let some air in or leave the oven door partly open when using that. Would that work? I would appreciate your comments thank you in advance. :)

    Because I don’t trust the temp on food dehydrator, I never put it any higher than 105 degrees just to make sure that it won’t go over the ‘raw point’ and kill my food.
