What's the Deal with Rice and Beans?

OK—so canned beans are not raw right, what about dried beans? Are they raw? And rice, what’s the deal with rice, are they all raw too, or not so much? When I soak rice and beans do I need to soak them in the fridge, or can i leave them on the counter top?

    If rice isn’t raw why do I keep seeing recipies for wild rice in “The Complete book of Raw Food” ? this is very frustrating…blerg Someone needs to write the difintive guid on raw with what is and what isn’t raw… :(

    OK—so I can find raw brown rice, frozen vegetables are never raw…waht about frozen or canned fruit? Raw or not?

    And about the beans—so I by any kind of bean dry, throw it in a glass jar with water and when it “sprouts” there ready to be used? So for example I could by dry pinto beans “sprout” them then process them to make raw refried beans?

    Thanks everyone! I really appreciate your help. I am still very exited about my raw adventure, but it is starting to feel a little daunting and overwhelming…but now that I think about it, when I first went vegan it was hard too. Seems like nothing was vegan, but now that i’ve had so much time with it, vegan is super easy…I hope once I aclimate to raw that it too will be easy (or at least easier!)

    I’m in the process now of finding out which beans, lentils, ect. my local Whole Foods sells raw/bulk and I’m planning on taking a trip down to the farmers market and food co-op on Saturday—I’m sure they will be able to help me a lot and show me specific things I can eat :)
