I miss onion gravy!!!

I used to love cooked onion gravy, but obviously can’t have it now:( The only raw gravy recipes I’ve found are for mushroom based gravies & I’m allergic to them so I can’t get my fix that way.Anyone got any ideas on how I could make onion or other gravy without the mushrooms?
