Raw Potatos?

Can you eat potatos raw? I just got a couple bags of organic potatos from my coop and was curious if I could eat them raw. If so, does anyone have a good recipe? I thought of slicing them thin and adding some oil, salt, etc. and throwing them into the dehydrator to make chips. But, I wanted to check first to see if they are truly edible raw. Anyone have any experience?
