Soggy Almonds?

I am having problems with my soaked almonds!!

I by almonds a pound or two at a time from Sprouts, and I always soak them all at once and then dehydrate them so they're crunchy again, and then I put them in the freezer so I can eat them slowly without them going rancid. When I dehydrate the almonds, I do it on about 115 for 24-30 hours and then test one to see if it's dried through. If it is, then I let them cool off completely before bagging them and tossing them in the freezer. I've been doing this for almost a year now, and never had a problem until the last 3 months or so. Now, when I test them they are dry, even after cooling off. After freezing, however, once they come back to room temperature, they are a bit soggy on the insides.

The only thing I could think to do was to dry them longer, so last time I dried them for a day and a half, tested them, and they seemed dry... but they did the same thing. Does anyone know what in the world is going on? Surely it doesn't take 2 or 3 days to dry out almonds, does it?
