Freezing young coconut meat

A lot of the recipes I enjoy require young coconut meat, where I live these coconuts are hard to come by. I started buying in bulk, but I was wondering if you can freeze the meat to use later, or if this would destroy the texture/taste?

    Thanks for the advice. That would be nice if my grocery store would carry it frozen.
