The Pumpkin Bread recipe located here and here calls for allspice. I don’t have all spice… so I searched for a substitute… which turned out to be made up of the ingredients already there – nutmeg, cinnamon, cloves.
So, I’m confused. Why not just add more of the same ingredients instead… or is it that allspice has a “special” flavor that cannot be duplicated with nutmeg, cinnamon, and cloves? Please let me know. We just made this dish with substitution and it tasted like it was missing something… like more dates or salt (not spice). We’re making it again for a potluck.

I always used cinnamon, nutmeg, ginger and cloves. I really like this combo. Check out the back of a can of Libby’s pumpkin for the ratio. I also always add just a little salt to anything sweet because it perks up the flavor. You should not taste the salt at all.
Try using the same spices as in the pumpkin pudding recipe. I tried it and it tasted great. You might not have used the right porportions of spices.
