recipe for coriander pickled onions?

Hi there.
I am looking to make some pickled onions for an upcoming catering event. They are part of a salad course which includes local winter greens, fresh black walnuts, and rehydrated dried cherries. I’ve made some krauts and kimchi in the past, though I’ve never pickled onions. Does anyone have any experience with this?
