recipe for coriander pickled onions?

Hi there.
I am looking to make some pickled onions for an upcoming catering event. They are part of a salad course which includes local winter greens, fresh black walnuts, and rehydrated dried cherries. I’ve made some krauts and kimchi in the past, though I’ve never pickled onions. Does anyone have any experience with this?

    awesome- thanks! i was finding that too- i just went to see sandor katz last night- the wild fermentation guy, and now i am inspired to just go for it and test out some ideas!
