I have totally been craving mushrooms like a mad person, too!! I wanted them so bad today that I drove to whole foods at 9:30 on a saturday night JUST FOR MUSHROOMS!! ha ha! It’s weird because usually I feel neutral about them. I haven’t been marinating them. I turn them upside down and spread guacamole and then top with a slice of tomato. Or I just sprinkle a little salt and enjoy plain. I can barely get home from the store or market without eating them straight out of the bag while driving. mmmmm!

It seems to me you folks are craving “umami” – the savory, meaty taste found in foods like meats, ripe tomatoes, aged cheeses, soy sauce etc. The perception of umami is the effect of free glutamates on taste receptors and can be in short supply in a raw vegan diet.
Please note, if you’ve had issues with MSG in the past, you may want to avoid high glutamate foods. If you tolerate glutamates well however, feel free to indulge – mushrooms such as shitakes and criminis, are very high in B vitamins and other nutrients vegans sometimes struggle to get enough of.

There is a chemical/molecules, sorry don’t know the scientific name for it, but anyway, there is something in mushrooms which is also found in meat. Which s interesting. I also have mushroom binges and have been wolfing down chestnut mushrooms marindated in olive oil garlic and salt for the past week or so, I just can’t get enough of them right now too!
They’ve got potassium,phospherous, magnesium, selenuim. calcium, iron, manganese, copper, zinc, vitamin d, niacin, vitamin c, pantothenic acid, 1.0g protein per 1/2 cup and 0.42 g fibre.
OMG I know!! HUNGRY FOR MUSHROOMS!!! Portabellos are just too good.
I’ve been a mushroom eater as well. Zinc you say? I will continue eating. That is, when my liquid feast ends. :)
I just thought it was a hoosier thing, lol. It’s spring in Indiana and that means mushrooms season. Morels are in high demand right now!

Portabellas are my favorite. I make spinach-stuffed mushrooms sometimes out of the baby portabellas (crimini). I made a raw pizza the other night and put tons of sliced mushrooms on it with my other veggies, and one night recently I just broke off chunks of mushroom and dipped them in raw mayo. Yum! Interesting to know about the flavor thingy.
Now I’ve got marinated mushrooms on carrot onion bread, it’s just like fried garlic butter mushrooms on toast, except, much, much better, I can’t stop eating it!!

I made some marinated mushrooms today for lunch at a cooked household and everyone was very intrigued by them! They each had a few bites and said they were delicious! Made me feel happy. :-)
I can’t get enough of marinated mushrooms right now!
zoe—i tried chris’ “grilled meat” recipe yesterday as per you suggestion… it takes a while but is it ever worth the wait! what a great chewy texture!

p.s for anyone trying to get REALLY raw and off nama shoyu, i used 2/3 (dehydrated) mushroom soak liquid to 1/3 seaweed soak liquid, blended it with sunflower seeds, a little water and a sliver of ginger. best asian sauce EVER!
I’m not sure if anyone does this…but it certainly burst open my bubble.
I was playing with some beautiful portabello’s and realized that when you destem them and put two together, they make FANTASTIC sandwich buns…and usually they have a lip which makes room for all of the goodness.
