I think the general consensus is they are safe to eat, but you have to let them ripen, which takes longer than conventional bananas. Ideally, the skin on a plantain should be almost all black before eating.
I've been eating plantains raw with no side effects! :)
They're not as sweet, but yummy just the same. I find I get "over-sweeted" easily and plantains are a nice alternative to bananas. They seems more starchy though. And yup, they take longer to mature on the counter. You cannot eat them unripe, as you would a greenish banana. Too bitter and hard.
They're a great idea for catching the low cost/sale produce though.
