How do you know dehydrating is raw?

How does everyone know that when you dehydrate something, it keeps the enzymes in tact? Have there been studies? I really would like to see these studies if anyone can find them.

I’m just wondering. This whole time, I have not been into the dehydrating part of raw, because it didn’t seem “raw” to me. But now I’m starting to miss crunchy things like chips and crackers and am thinking of buying myself a dehydrator. So, is it REALLY raw? Don’t nutrients die in any amount of heat?

    I read of one person who threw a flax cracker out her window rather frivolously one day, and it ended up growing a flax plant!

    That was proof to me that dehydrated food can still be ALIVE.

    I don’t prefer dehydrated items, however; it sits too heavy in my stomach and fresh makes me feel best.

    Still, for transitioning, don’t fear dehydration; the food is still alive if you did it properly.

    (just drink a lot of water if you eat the dehydrated stuff)
