Fruit leathers "cracking"

Hi all,

I’m new to dehydrating but totally loving it so far. My 2-year-old and I have been enjoying fruit leathers in particular. The first batch I made, which was strawberries, pears, and a banana, came out perfectly—-just like the commercial kind. But every batch I have made since has buckled or cracked in the middle, resulting in big fissures instead of remaining one continuous sheet. Any suggestions on how to prevent that?

Also, about how much puree do you put on the Teflex sheet for a leather?

    You should probably use more puree and dehydrate a little shorter

  • Thanks for the suggestions. I will try more puree. Dehydrating time does not play a role though, because the buckling happens soon after I place the tray in the dehydrator.
