Olives. Raw?

Does anyone know if most greek/italian olives that you buy in the grocery store are raw? Not the black olives from the can, but the ones in the jar, kalamata for example.

    Olives in a jar unfortunately aren't raw, but if you order them online they would be. say, www.sunfood.com fr example.

    Unless you buy a jar that are clearly marked as raw, assume that they are not raw. The sunfood raw olives are great! They're as good as any un-raw ones or better! I have three different kinds: Greek, Moroccan and Peruvian. The Peruvian ones are unsalted, which is wild. They're very handy if you're making tapenade and don't want it to be too salty.

    Thanks so much for the info. I figured they were cooked, but then thought about it and thought maybe there was some chance that they were just cured and not cooked. Now I know. My friends and I are hopefully going to start a small co-op soon. Maybe we can order some in bulk then. Yummy! Thanks!
