A splendid table, RAW.

derrycklderryckl Raw Superstar

This is the NPR (radio) programme that will have been heard in the States. I am looking for a particular episode from 2004!!! When they dealth with raw food...

Here's what it says...

We're cooking in the raw, vegan style, with renowned Chicago chef Charlie Trotter, co-author of a new book aptly titled Raw. It's stunning food using new techniques like those in his recipe for Cauliflower Soup with Balsamic Red Onions and Wilted Lettuce. The Sterns are nibbling succulent shrimp while basking on the sunny deck at the Anchor Line in South Carolina's James Island. David Rosengarten has hot chocolates that "will likely improve your winter by geometric proportions!" Kitchen detective Christopher Kimball reveals how ordinary carrots and turnips became "ravishing roots" in his recipe for Ten-Minute Root Vegetables. Maria Bakkalupa takes us to Bali for its quintessential celebration of babies, gods and food, and New York's Mr. Cutlets, author of Meat Me in Manhattan, has advice for carnivores and Dr. Atkins' fans looking for their next meal in the Big Apple. (Broadcast Date: December 31, 2004)

Question to all you lovelies.. Any idea how to track down episodes of this programme that go so far back? I have trawled all the usual podcast archives, but they only go as far back as 2007.

  • here is the link for NPR's archive of December 31st 2004.

    ((((removed the link))))

i'm not seeing anything like your description on the page, but I'm tired and it's been a long day so I could easily be missing it.

    Good luck

    ok...never mind....I found what you're looking for.

  • That soup sounds good but I'm just not sure how I feel about the wilted lettuce?? If you try it, please do let us know how it turned out!

  • derrycklderryckl Raw Superstar

very nicely done, twitch! Three stars for you.

That was exactly what I was looking for...Many of my family are "Splendid Table" devotees, and I think that this will assist with my advocacy (a casual mention/forwarding of this link ;-) - I am rolling it up right now (making a podcast MP3 of it).

Here is the link to the soup : http://splendidtable.publicradio.org/recipes/light_cauliflower_soup.shtml

I'd post it, but I would not want to infringe any potential copyright... might work for high raw, I saw wine and balsamic vinegar in the list of ingredients - but I am sure that a creative lot like us can come up with equally delightful alternatives!)

I did a mini-trawl of that splendid table website, and I found a few things, including this interesting "I bet you did not know" kind of quote (in a discussion about Jelly)

"Certain raw fruits have an enzyme that will prevent gelatin from setting. Pineapple, mango, kiwi, and ginger must all be cooked for 5 minutes to destroy the enzyme before using. Fructose is available at health food stores."
