I also bought a coconut recently. I used the juice to make a raw lime pie. As for the actual meat, I used it to make a bannana sorbet, which is basically this:
1. Blend two frozen bannanas until creamy. Add a sweetner, if you desire.
2. Once the bannanas are well blended (sometimes I add a bit of almond milk to help them get smooth faster), throw in a few pieces of coconut.
You can add any additional ingredients. Because the bananas are frozen and the coconut is hard, the texture did come out very similar to ice cream or a sort of sorbet. It tastes pretty good, if you ask me.

Young coconuts are def one of my fun new favorites. I usually get 3 a week and they get made into smoothies. I started out making choc flavor with coconut, banana, cacao powder & butter, some maca & goji berries. It made me feel a bit jittery but maybe I was just sensitive to the caffeine.
Now my absolute favorite is 1 young coconut, 1 frozen banana, a big wedge of fresh pineapple and half (about 4 in.) of a sun dried vanilla bean. Shoot me to the moon, I'm in heaven! =)
To learn how to open the coconut correctly, if you don't already know how, you might want to look it up on utube, that is what I did. they will show you step by step so you dont spill the water everywhere. I like to make coconut milk which is just the meat and the coconut water blended and then I drink it, super yum!!!! sometimesI add a little cacao and it is a super yummy super easy little treat. Enjoy!!!!!!!!!
Just a warning, DH and I have both injured ourselves opening the little b@$t@rds. I have nothing more than a half-inch scar, but DH needed ten stitches!

No problem. Most of us are used to seeing the regular round brown furry coconuts but the "young or Thai" coconuts are covered in a WHITE husk that looks ground smooth and to a point on top. When you shake them they are REALLY full of water. They also tend to be hard to find. I have a favorite Asian Market close to me but I'm not sure how you will fare in Croatia. Maybe internet but I'm hoping you will track them down nearby. If you find one take care opening them. I got a big heavy cleaver that I use just for young coconuts. It was cheap and this way I wont ruin a good knife. Just hoping I die with all my fingers still attached. Ha, also I do peel and cut my bananas in half before I throw them in a freezer bag. They work great in smoothies but they get brown and mushy if you thaw them out. =)
poke a fork into the bottom of the young coconut when it's on it's side, when you're ready to start hacking it open. That way you won't have your precious fingers anywhere near the knife!!
