Sweetener Equivalents for 1/2 Cup of Sugar

Agave Nectar: 3/8 cup (reduce other liquids by 1/3) [ 90% fructose; lower GI than can sugar, maples syrup, or honey. ]

Barley Malt: 1 1/2 cup (multiply by .25 to find agave equivelant)[ comes from sprouted grains of barley that are kiln dried and cooked with water. barley nalt is the commonly used sweetener in soy products. may contain corn syrup or refined sugar; read label carefully]

Brown Sugar 1/2 cup [simply white sugar with a bit of molasses addd for color]

Corn Sweetener 1/2 cup

Date Sugar: 1 cup [ dried, pulverized dates. it is very sweet, and although it does not disolve well, it is fine for cooking]

Fruit Juice Concentrate: equal to sugar (reduce other liquids by 1/3)

Granular Fruit Sweeteners: equal to sugar

Honey: 1/3 cup (reduce other liquids by 1/3) [high on the GI and not reccomended for infants and small children, it is sweeter, higher in calories, and spikes blood sugar levels more quickly than white sugar]

Maltose (from sprouted grains): 1 1/4 cup

Maple Syrup: equal to sugar (reduce other liquids by 1/3) [ high on the GI, it's 65% sucrose, 35% water, and contains minute amounts of minerals. use only organic pure maple syrup, as anything less could be genetically modified corn syrup with as little as 3% maple syrup]

Molasses: 1/3 cup [ 65% sucrose, ranking high on the GI. does contain measurable amounts of iron, calcium, magnesium, and potssium, making it more nutritious than most sweetners]

Raw or Organic Sugar: 1/2 cup

Rice Syrup: 1 1/4 cup [ highest protein content of any natural sweetener.]

Sorghum Syrup: 1/3 cup [ made from sorghum, a grain related to millet and similar in appearance to corn. the juice from the plant is extracted and boiled down into a syrup]

Splenda: 1/2 cup

Stevia Powder (SweetLeaf Brand) 1 Tbsp. [has a GI of 0, has no calories, and does not spike blood sugar]

Stevia Liquid (Sunnydew or Sweetleaf Brands) 1/2 tsp.

Sucanat: equal to sugar * if replacing honey or syrup, icrease liquid by 1/3 [ not as high on the GI as white sugar, but still relatively high, it is 96% sucrose and 4% minerals. although not raw, it is a natural food.]

Turbinado: 1/2 cup
