What to do with squash?

My neighbor just gave me a few squash, but I have never eaten them before.

Any suggestions of what I can do with them?

    what sort of squash? If they're zucchini, you could make spaghetti!

    If you don't have a spiralizer, you can do it with the vegetable peeler and make long thin strips, they're great with tomato sauce. I also peel them and add them to my smoothie in the morning. You can use them to make hummus. I posted a few recipes last year because my garden was loaded. I am on a slow connection or I would post the links. The last time I looked I was on pages 32 and 33 when you go to the recipes page and sort by name.

    There's a great recipe in the Rawvolution book for zucchini hummus.

    I also like to slice them into thick coins and dip them in sunflower seed dressing (or something similar)

    You could throw one in a blender with a few other ingredients to make ranch dressing. This is what I put together one day a while back, when my bf wanted something different:


    apple cider vinegar

    olive oil

    -> Blend until creamy. Add:

    hemp seeds


    dill weed


    -> Blend again, until creamy.

    Hmmm, these all sound pretty good. They are really large squash. Kind of pear shaped, but they have some curve to them. I still have them sitting around too, so hopefully they are still good. I just randomly remembered today I posted this. I've made the zucchini hummus from Rawvolution before. That is definitely an option, especially since I LOVE raw tahini.

    I made a hummus recently using squash and ground pumpkin seeds (ground in the coffee grinder) it was delicious, I was out of tahini, but now I think I'll always use the pumpkin seeds. You can spiralize them and dehydrate and use like noodles in a brothy soup, heres a favorite recipe: http://www.goneraw.com/node/15235.
