Beet Green Suggesions?

SimplyRawesomeSimplyRawesome Raw Jr. Leader

I know I can chop up beet "stalks" (or greens) and add them to salads, or I can include them in my green smoothies, but I was just wondering if anyone had any other recipe suggestions for the green part of the beet. Thanks!

  • GeorigaPeach - did you try any of these recipes? Did you come up w/any other idea?

I have some beet greens w/the stems and I was thinking of just making a green smoothie w/them but didn't know if I could eat the stems or not.

  • The stems are edible, I dice them into my salads or add to my smoothies.... Good luck with your adventures on being raw...

Well if you're talking about the stalk with the green leafy part on top of the beet, I can tell you they make great wraps. Mix some avocado w/ lime, garlic, onions, cut up some veggies to throw in there, carrots, peppers, cucumbers etc, and roll it up in a beet green. The stem is not too hard, so it works pretty well for a lettuce wrap. :)
