Another idea would be to use up any left overs from the weekend or you could do tacos with veggies, salsa, guac, walnut 'meat' in lettuce wraps.

Thanks sv3, I'll try them out! Options are always good. I could probably have a salad for dinner almost every night but my husband and daughter are not there yet. Dinner has become a challange for me during the week. I'm exauhsted when I get home from work but still need to feed my family and I want to give them food that is good for them you know. Now that I know the nutritional value of raw foods it's hard to serve them something I know is not good for them. It would be so easy to just boil some pasta and throw on some tomato sauce from a jar (my daughers favorite quick meal or cook vegies and quinao w beans for my husband (his staple dinner) so that he feels full. I find my self comming home from work and looking at a fridge full of veggies but not sure how to throw them together to make a meal for them.
what you could do is make some kind of pate (theyre all over this website) and make enough to last the week. it could be wrapped up with some lettuce/collard/kale and all the usual raw garnishes and on a salad for you. it's pretty simple and filling since it's nut based. green smoothies are fast, too.

Oh yeah, I've made some lovely pates and they should last between 3-5 days in the fridge.
