Mamey Sapote. . . Some recipes would be lovely! :)

My farmers' market has just gotten a batch of nice and ripe mamey sapotes from Florida and I bought a couple of them to try last Friday.

I have never had one before so I plan on eating one of the mameys by itself. THe other mamey, however, I would love to try to make some sort of nice dessert out if it for my mother and brother to try. Any ideas? The simpler the better, and as low-fat as possible please! :)

    I just tried one of the two Mamey Sapotes and wow! Both the taste and the texture made me think I was eating cold sweet potato with maple syrup! :)

    I bet you could sub it for the mango in a mango cheesecake too:)
