Sprouting & Dehydrating= Mildew

I have tried sprouting nuts and buckwheat and they always mildew in a few days, but when I make eggpant jerky it doesn't-last forever. I don't understand. What am I doing wrong. I expect my raw cookies to mildew in about 4 days, but thought sprouting and dehydrating would make my nuts and grains last longer. How long should I dehydrate?

    Although I would also expect a longer shelf life from a dehydrated food, they it would still contain moisture no matter how long its been dehydrated. Also, there's only a certain amount of moisture you can pull out of something using 105 degrees or whatever you use. Dehydrating for an extra hour or two might help you out, but I would first recommend storing your live foods in a refrigerator. You can even do this with sprouts while they are still growing (although it might slow them down bit).
