  • Well, agar is $60+ per pound. You only need a little bit of Irish moss or agar flakes at a time. I’m not sure how long Irish moss keeps. Lecithin or chia seeds could be another substitute. Cheaper.
  • I’ve never used it myself… it’s supposed to make things thicker or more gelatinous. I use agar instead; it’s easier to find.

  • Here is where I learned abut the mature/immature seeds. It’s in the video about 2/3 to 3/4 of the way into the video… so you can just “fast forward” to that section… you should see a watermelon. I think fruit should have good mature seeds.

  • I vary mine… I use Lapas, Bionature, and Rapuzel. All organic kinds… whatever they sell at Whole Foods that’s “cheapest” but 1st cold-pressed. Where on the Bariani website does it say its cold pressed.
