This is a mild, citrus-flavored salad that is high in minerals due to its use of a sea veggie. I ate this at a raw potluck and it was wonderful.

Ingredients
1 cup Arame, soaked for 15 minutes
2 cup Carrots, grated
½ cup Currants, soaked for 15 minutes
Orange Juice & Zest from one Orange
1 tablespoon Agave or Honey
Recipe Directions
Drain the arame and currants.
Mix all items together and let sit for an hour. Serve
