Morel Mushrooms

These are a popular mushroom at this time of the year. Also very expensive ($35 / lb.) unless you find them yourself in the woods. We used to always eat them coated in flour and fried in butter and olive oil.

Anyway, my question is….Does anybody know if these can be eaten raw? I’ve seen some sources say that they are slightly toxic if eaten raw. But, I wonder then, if they can be eaten cooked, why not raw?

Anyone know?

    Well, I didn’t find out until fairly recently that they are toxic raw. Here’s the post where I found out. Basically, it says that cooking ‘neutralizes’ the poison. I’m not sure what that means… and I didn’t find out because I don’t think I’ve ever eaten morels and I don’t really like mushrooms.

    i had them raw at pure food and wine nyc, i believe they were marinated and dehydrated. pretty good!
