Carrot cookie challenge

I’ve got quite a lot of carrot pulp left over and thought I’d see if anyone is interested in stepping up to a Carrot Cookie Challenge? I searched the recipes for a carrot cookie and didn’t get any hits. Any of creative chefs out there want to give this a shot? Thanks upfront!

  • Angela Stokes has a recipe on her site that uses veggie pulp (at least half carrot) to make a banana bread. I bet you could transform that into cookies.

  • Or maybe a carrot cake-like cookie, with raisins and walnuts and cinnamon?

I’ve made these a couple of times, not bad.

  • http://vegweb.com/index.php?topic=12271.msg163330 Ive made these before with carrots instead of carrot pulp and they were a big hit …mu mom tried to get me to make em in bulk and mail em to her! Ha… So Id try it with carrot pulp… actually I will as I have a ton of pulp right now!

  • someone at my last potluck brought in some flax crackers that were made with carrot pulp.

  • I like the looks of the “take the cake” carrot and raisin bar. I’m going to give that a shot.

Of the raw carrot cake recipes ya’ll have tried which one do you like best? At the raw restaurant here in Santa Fe, I tried their version but it didn’t really “wow” me. It was the first and only raw carrot cake I’ve ever tasted so I have nothing to compare it to…

Thanks for the posts. Please keep ‘em coming!

If you check out my goji cacao buns (posting today), they have carrots in them, instead use your pulp.

  • I just posted some raw carrot spice cookies today, so I thought I would google “raw carrot cookies” to see what other similar recipes I could find, and found this forum – very fun! Cheers, Kelly

  • I LOVE this recipe: http://freshtopia.net/vlog/?p=84 I dehydrated them for a while and they were like cookies! SOOOOOOO YUMSTERS!
