  • yes, unsoaked nuts have enzyme inhibitors that could cause that type of reaction, particularly almonds and walnuts. cashews & macadamia nuts not as much, and other nuts are in the middle.

  • seems like you are pretty well set on staples… i would buy stuff like cucumbers tomatoes and celery at farmer’s markets if you can… and you will need more greens for sure. get onions and make onion bread, then you can make sandwiches!
  • the fat content in nut milk is not that high, like maybe 3 grams per serving, but if you prefer, some people make milk with banana or buckwheat. i like almond or hemp milk, myself.
