1 cup dates (soft)
1/2 cup pecans
2/3 cup raisins
1 medium orange (well peeled, cut off white rind)
1 large apple (peeled, cored, roughly chopped)
1 teaspoon orange zest (outer orange peel)
1 teaspoon cinnamon (or 3/4 teaspoon cinnamon + 1/4 teaspoon cloves)
1/8 teaspoon salt (or less)
Directions
1. Add all ingredients to food processor EXCEPT RAISINS. Process very well.
2. Add raisins. Pulse again until raisins are well distributed but raisins still looked like raisins :)
The Rawtarian's Thoughts
Most of my other raw pudding recipes are very creamy. However, this raw spicy apple orange nut pudding recipe is much heartier and denser. In fact, it reminds me more of a raw Christmas pudding recipe or a raw mincemeat pie filling than a cashew-based raw tapioca or raw rice pudding recipe.
If you are in the mood for a spicy dense pudding then give this a try.
This pudding has a very strong orange/cinnamon flavor and is definitely best served with something to lighten the punch. For example, a (large) dollop of raw whipped cream cuts the flavor very well.
This makes a small batch, good for two (or possibly three) people for dessert. But again, it is best served with raw whipped cream or with this creamy sweet dip.
Another nice option is that you can take this recipe and turn it into raw sweet bread very easily (by simply adding psyllium husk and ground flaxmeal) and then dehydrating it. The recipe for that is here.

I love this pudding, its very simple, takes only a few minutes to make and it's delicious!
My kids eat it up.
I omit the raisins and just leave the dates a little chunkier, I find it's sweet enough just like that.

Hi, I would like to turn this into a breakfast. Do you think I could change the pecans to maybe 1/4 cup soaked almonds, 1/4 cup soaked sunflower seeds and 1/4 cup chia seeds. Or do you have another combination that would work better. I like the creamy look this recipe has, if I take out the pecans will it totally change the recipe.
