2 organic apricots (pit removed, chopped)
1 teaspoon lime juice
2 teaspoons raw honey (to taste)
2 tablespoons Irish moss gel
1 tablespoon lucuma powder
1 ice cube
1. Add all ingredients to blender except ice cube and blend briefly till liquefied. Add ice cube and blend till liquefied.

I wanted something light and refreshing to finish my day of fasting from solid food.
I came up with delightful little smoothie. You will be coming back to make seconds!
For a slight variation, blend two ripe nectarines with one apricot and the rest of the ingredients.
If you’re not familiar with Irish Moss and/or don't have it on hand, you could try experimenting with some pre-soaked chia seeds instead also.
