All you need is a sharp knife for this one! It’s best to cut an edge off of the Jicama before you cut it so you have more stability when cutting. Also peel the Jicama before you slice the rounds. I cut the pepper rounds from the top of the pepper. This is great cold and might be good with a little yogert or fresh strawberries.

This looks like fried eggs but it is just a round slice of Jicama on the bottom and a smaller round slice of yellow bell pepper on the top. The “bacon” is a thin slice of red bell pepper and a lighter color vegtable or fruit on top to look a little like bacon. I used a thin slice of Jicama but pineapple would be nice too. I added cornbread I made on the dehydrator with fresh corn kernels blended with onion, pepper, tomatillos, jalepenos, and pine nuts.

well...yeah, it LOOKS like eggs...but isn't jicama crunchy? eggs+crunch=.....??? eggs are more gelatinous. a better alternative would be young thai coconut meat- which actually has the consistency of egg whites. top with....mmmm....either papaya scooped with a melon baller or pineapple....i don't know how to make that round like a yolk, but it would combine nicely.

Hi writeeternity. I was thinking of bacon (queenfluff's recipe), eggs (thanks for the recipe) and cheese... Many many awesome recipes on this site! That breakfast just may happen for me... Thanks for the contribution, i love it :o)

Hi Queenfluff, Thankyou for the comment! I should have written the recipe down when I did it for the cornbread but I didn't. It was about 2 cups of corn, a couple handfulls of ground flax seed and almond meal, a quarter red pepper, and some tomatillo. A little cayanne and pepper. I put it thick on the dehydrator and let it go for about 18 hours.

If you have time, please post the corn bread recipe too. I made some from another recipe and I was so disappointed in it - it had no taste. Yours sounds like it might be tasty! The 'eggs' look so cool! I have a "raw bacon" recipe myself on here - yours is a lot easier to make than mine though! :)

Thanks Jordan! It's actually very satisfying. I put a little salt and pepper on the top. I haven't tried it heated up in the dehydrator but that could be an option. I was thinking some kind of "hollandaise" sauce would be good with it too. Your dog is cute! I have 3 and a cat that thinks he's a dog.
