2 slice Jicama
2 slice Yellow Bell Pepper
2 slice Red Bell Pepper
2 slice Other light colored Veg. or fruit
All you need is a sharp knife for this one! It’s best to cut an edge off of the Jicama before you cut it so you have more stability when cutting. Also peel the Jicama before you slice the rounds. I cut the pepper rounds from the top of the pepper. This is great cold and might be good with a little yogert or fresh strawberries.

This looks like fried eggs but it is just a round slice of Jicama on the bottom and a smaller round slice of yellow bell pepper on the top. The “bacon” is a thin slice of red bell pepper and a lighter color vegtable or fruit on top to look a little like bacon. I used a thin slice of Jicama but pineapple would be nice too. I added cornbread I made on the dehydrator with fresh corn kernels blended with onion, pepper, tomatillos, jalepenos, and pine nuts.
